Vegetarian Quesadillas with Black Beans and Sweet Potato

A delightful combination of flavors, these vegetarian quesadillas are filled with sweet potatoes, black beans, and melted cheese, making them perfect for a quick, nutritious meal.

Ingredients

  • 1 Large Sweet Potato, peeled and diced
  • 1/2 Cup Black Beans, rinsed and drained
  • 1/4 Cup Corn, rinsed and drained
  • 1 Mini Red Pepper, diced
  • 1 Mini Orange Pepper, diced
  • 1 Tsp Jalapeno, diced (optional for heat)
  • 1 Tbsp Easy Homemade Taco Seasoning (or store-bought)
  • 4 Medium Flour Tortillas
  • 1 Cup Cheddar or Pepper Jack Cheese, grated
  • 1 Tbsp Butter (for pan frying)
  • 2 Tsp Olive Oil, divided
  • Fresh cilantro, chopped (for serving)
  • Lime juice (for serving)
  • Your favorite salsa (for serving)
  • Sour cream (for serving)

Instructions

  1. In a medium pot, bring water to a boil. Add the diced sweet potato and cook until tender, about 10 minutes. Drain and set aside.
  2. In a large mixing bowl, combine the cooked sweet potato, black beans, corn, red and orange peppers, jalapeno (if using), and taco seasoning. Mash the sweet potato slightly to blend the flavors.
  3. Lay one tortilla flat on a clean surface. On half of the tortilla, layer about 1/4 cup of the filling mixture and 1/4 cup of cheese. Fold the tortilla over to enclose the filling.
  4. Heat 1 teaspoon of olive oil in a skillet over medium heat. Add the assembled quesadilla and cook until golden brown and crispy, about 3-4 minutes on each side. Repeat with the remaining tortillas, adding more oil as needed.
  5. Slice each quesadilla into wedges and serve warm with fresh cilantro, lime juice, salsa, and sour cream.

Notes

Don’t overfill the quesadilla for the best results. Use fresh ingredients for enhanced flavor and adjust spice level as desired.
