A deliciously creamy no-bake cheesecake made with cashews and topped with a sweet berry sauce, perfect for vegans and dessert lovers alike.

Ingredients

  • 2 cups cashews, soaked
  • 1 cup coconut cream
  • 1/2 cup maple syrup
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (for sauce)
  • 2 tablespoons honey or agave (for sauce)

Instructions

  1. Prepare the cashews: Drain and rinse the soaked cashews under cold water.
  2. Blend the cheesecake mixture: In a high-speed blender, combine the soaked cashews, coconut cream, maple syrup, lemon juice, and vanilla extract. Blend until completely smooth and creamy.
  3. Set the cheesecake: Pour the cashew mixture into a springform pan and spread it evenly.
  4. Chill: Place the cheesecake in the refrigerator for at least 4 hours or until firm.
  5. Make the berry sauce: In a small saucepan, combine mixed berries and honey or agave. Cook over medium heat for about 5-7 minutes until berries break down.
