A simple and delicious weeknight meal, featuring tender chicken, fluffy rice, and vibrant broccoli, perfect for meal prep or a quick family dinner.

Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup long-grain white rice
  • 2 cups chicken broth or water
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Garlic powder (optional)
  • Onion powder (optional)

Instructions

  1. Sauté the chicken: In a skillet, heat olive oil over medium heat. Add the chicken pieces, season with salt, pepper, garlic powder, and onion powder if using. Cook for about 5-7 minutes, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  2. Toast the rice: In the same skillet, add the rice. Toast it for 1-2 minutes, stirring frequently to prevent burning.
  3. Cook the rice: Pour in the chicken broth or water and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the rice is tender and the liquid is absorbed.
  4. Steam the broccoli: While the rice is cooking, steam the broccoli florets in a separate pot until tender, about 5 minutes.
  5. Combine and serve: Once the rice is done, fluff it with a fork and mix in the cooked chicken. Serve immediately with the steamed broccoli on the side.

Notes

Rinse the rice before cooking to prevent it from becoming gummy. Be careful not to overcook the chicken.
