A comforting dish featuring tender beef, creamy sauce, and savory mushrooms, perfect for busy weeknights.

Ingredients

  • 1 pound beef sirloin or tenderloin, thinly sliced against the grain
  • 8 ounces cremini or button mushrooms, sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup sour cream (or Greek yogurt as a substitute)
  • 2 tablespoons all-purpose flour
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Egg noodles, rice, or mashed potatoes for serving

Instructions

  1. Prepare the beef by seasoning with salt and pepper.
  2. Sauté the onions in a skillet with oil over medium-high heat until translucent, about 3-4 minutes.
  3. Cook the beef in the skillet over high heat for about 2-3 minutes until browned, then remove and set aside.
  4. Sauté the mushrooms in the same skillet for about 5 minutes, then add garlic and cook another minute.
  5. Make the sauce by sprinkling the flour over the mushrooms, stirring for 1 minute, then gradually whisking in the beef broth and bringing to a simmer.
  6. Combine the beef back into the skillet with mustard and sour cream, stirring until well combined.
  7. Serve hot over your choice of noodles, rice, or potatoes.

Notes

Slice beef against the grain for tenderness. Fresh mushrooms provide better flavor than canned.
