Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon

  • 1/2 teaspoon ground ginger

  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1/2 cup applesauce
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Combine the flour, baking soda, baking powder, salt, and spices in a large bowl.
  3. Mix the granulated sugar, brown sugar, pumpkin puree, vegetable oil, applesauce, eggs, and vanilla extract in another bowl until smooth.
  4. Combine the dry ingredients with the wet mixture, stirring gently until no flour streaks remain. Fold in walnuts or chocolate chips if using.
  5. Pour the batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
