2 cups all-purpose flour
1 ½ cups granulated sugar
1 cup unsweetened cocoa powder
1 tablespoon baking powder
1 teaspoon baking soda
½ teaspoon salt
2 large eggs
1 cup whole milk
½ cup vegetable oil
2 teaspoons vanilla extract
1 cup unsalted butter, softened (for icing)
4 cups powdered sugar
2-4 tablespoons milk (for icing)
Purple food coloring (to desired shade)
Instructions
Preheat your oven to 350°F (175°C) and grease two round 9-inch cake pans. Dust with flour for easy removal later.
Mix dry ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until combined.
Combine wet ingredients: In another bowl, mix the eggs, milk, vegetable oil, and vanilla extract. Whisk until fully combined.
Combine mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Be careful not to overmix.
Divide the batter evenly between the prepared pans. Bake for about 30 minutes, or until a toothpick inserted into the center comes out clean.
Cool the cakes in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Make the icing: Beat the softened butter until creamy. Gradually add powdered sugar, mixing well. Add milk until desired consistency is reached, then mix in purple food coloring.
Spread icing on top of one layer, place the second layer on top, and ice the top and sides of the cake.
Decorate with Halloween-themed decorations.
