A comforting and delicious twist on classic lasagna that combines all the beloved flavors into a warm, hearty soup, perfect for chilly evenings.

Ingredients

  • 1 lb ground beef or sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 8 oz lasagna noodles
  • 2 teaspoons Italian seasoning
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

  1. Brown the meat in a large pot over medium heat until it is browned. Drain the excess fat.
  2. Add the chopped onion, minced garlic, and chopped red bell pepper and sauté until softened, about 3-5 minutes.
  3. Stir in the crushed tomatoes, broth, Italian seasoning, red pepper flakes, salt, and pepper; bring to a boil.
  4. Break the lasagna noodles and add them to the pot. Reduce heat and simmer until noodles are tender, about 10-12 minutes.
  5. Stir in the ricotta cheese until fully combined and creamy.
  6. Serve hot, topped with shredded mozzarella cheese and fresh basil.

Notes

Adjust the spice level with red pepper flakes to suit your family’s taste. Fresh basil adds flavor and color when serving.
