Ingredients
1 lb chicken breast (or chickpeas for a vegetarian option)
1 cup quinoa (or brown rice for a different texture)
2 cups mixed bell peppers, diced
1 cup broccoli florets
1 onion, chopped
2 tablespoons olive oil
1 teaspoon garlic powder
Salt and pepper to taste
1 tablespoon soy sauce or lemon juice (optional)
Instructions
Rinse 1 cup of quinoa under cold water. In a pot, combine the quinoa with 2 cups of water. Bring to a boil, then reduce to a simmer. Cover and cook for about 15 minutes, or until the water is absorbed and the quinoa is fluffy.
Cut the chicken into bite-sized pieces (if using) and add it to the skillet. Cook until the chicken is no longer pink, about 5-7 minutes. For chickpeas, add them after the onion has softened. Then, add the diced bell peppers and broccoli florets. Stir-fry for an additional 5-7 minutes until the vegetables are tender.
Sprinkle with garlic powder, salt, and pepper. If desired, add soy sauce or lemon juice for extra flavor. Mix everything well and let it cook for another 2 minutes to combine the flavors.
Fluff the quinoa with a fork and divide it among meal prep containers. Top with the chicken and vegetable mixture. Allow to cool before sealing the containers for storage.
