Chicken Alfredo is a creamy, flavorful dish that combines tender chicken with a rich sauce and perfectly cooked pasta, making it perfect for busy weeknights or special occasions.

Ingredients

  • 8 oz fettuccine pasta
  • 2 tbsp butter
  • 2 boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1-2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Boil salted water in a large pot, adding the fettuccine. Cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
  2. Season the chicken breasts with salt and pepper. In a large skillet, melt the butter over medium heat. Add chicken breasts and cook for about 6-7 minutes on each side until golden and cooked through. Remove from the pan and let rest before slicing.
  3. Lower the heat in the same skillet and add the minced garlic, sautéing for about 1 minute until fragrant. Slowly pour in the heavy cream, stirring to combine. Allow it to simmer for 2-3 minutes.
  4. Gradually stir in the Parmesan cheese, allowing it to melt into the sauce. If the sauce is too thick, incorporate a bit of the reserved pasta water until you achieve the desired consistency.
  5. Add the cooked fettuccine and sliced chicken to the Alfredo sauce. Toss gently to combine and coat evenly. Adjust seasoning with additional salt and pepper if needed.
