Lasagna Soup offers the comforting flavors of classic lasagna in a hearty and satisfying bowl, making it perfect for a cozy weeknight dinner.

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef broth
  • 2 cups water
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
  • 8 oz lasagna noodles, broken
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Cook the meat: In a large pot, brown the ground beef with the chopped onion and minced garlic over medium heat. Cook until the meat is no longer pink, stirring occasionally. Drain any excess fat.
  2. Add the base: Stir in the crushed tomatoes, beef broth, water, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
  3. Add noodles: Once boiling, add the broken lasagna noodles. Reduce the heat to a simmer and cook according to package instructions until the noodles are al dente.
  4. Prepare the cheese mixture: In a separate bowl, mix together the ricotta cheese, 1 cup of mozzarella cheese, and Parmesan cheese until well combined.
  5. Serve the soup: Ladle the soup into bowls. Add a scoop of the ricotta mixture into each bowl, sprinkle with the remaining mozzarella cheese, and garnish with fresh basil before serving.

Notes

Ground beef adds a great flavor, but you can substitute it with ground turkey or sausage for a different taste. Feel free to use gluten-free lasagna noodles if needed.
