A refreshing and easy-to-make Korean side dish highlighting the bright flavors of fresh cucumbers with a savory, tangy, and slightly spicy dressing.

Ingredients

  • 2 large cucumbers
  • 1 teaspoon salt
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon chili flakes
  • 1 teaspoon sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds
  • 2 green onions, finely chopped
  • 1 garlic clove, minced (optional)

Instructions

  1. Wash the cucumbers thoroughly and cut them into thin slices or bite-sized pieces.
  2. Place the sliced cucumbers in a bowl, sprinkle with salt, and let sit for about 5 minutes.
  3. In a separate bowl, combine rice vinegar, soy sauce, chili flakes, and sugar. Stir until the sugar dissolves.
  4. After 5 minutes, rinse the cucumbers under cold water and drain well.
  5. Add the cucumbers to the dressing, followed by sesame oil, sesame seeds, green onions, and garlic (if using).
  6. Toss everything together until well-coated, then serve immediately or refrigerate for 30 minutes.

Notes

Use fresh cucumbers for the best flavor and crunch. Allowing the salad to sit for a while enhances the flavors.
