A delightful and nutritious twist on a classic sweet potato casserole, perfect for holiday gatherings or weeknight dinners.

Ingredients

  • 4 large Sweet Potatoes
  • 1 cup Almond Milk
  • 1/4 cup Maple Syrup
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1 teaspoon Vanilla Extract
  • 1 cup Pecans, chopped
  • 1/4 cup Coconut Oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the sweet potatoes by peeling and chopping them into chunks. Boil in water for about 15-20 minutes, or until fork-tender.
  3. Mash the sweet potatoes, then mix in almond milk, maple syrup, cinnamon, nutmeg, and vanilla extract until smooth.
  4. Transfer the mixture into a greased 9×13-inch baking dish, spreading evenly.
  5. Prepare the topping by mixing chopped pecans and melted coconut oil, then sprinkle evenly over the sweet potato layer.
  6. Bake for 25-30 minutes, or until the topping is golden brown and crispy.
  7. Serve warm as a side dish or on its own!

Notes

For a creamier mash, gradually add more almond milk. Substitute pecans with gluten-free bread crumbs for a nut-free version.
