A beloved treat that transforms overripe bananas into a deliciously moist loaf, perfect for breakfast or dessert.

Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Mix in the melted butter until well combined.
  4. Combine the baking soda and salt, then add the sugar, egg, and vanilla, mixing just until incorporated.
  5. Add the flour and gently fold until no streaks remain.
  6. Prepare a loaf pan by greasing or lining it with parchment paper.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-65 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Best made with very ripe, brown bananas for maximum sweetness. Avoid overmixing the batter.
