These Healthy Banana Oatmeal Muffins are a simple, nutritious option for breakfast or snacks, easy to make without a blender.

Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup milk
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond butter (or any nut butter)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Optional: Nuts or chocolate chips for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with liners or lightly spray it with cooking spray.
  2. Mash the ripe bananas until smooth in a large bowl.
  3. Add the rolled oats, milk, honey or maple syrup, almond butter, baking powder, vanilla extract, cinnamon, and salt to the bowl. Mix well.
  4. Fold in nuts or chocolate chips if desired.
  5. Divide the mixture evenly among the muffin cups, filling each about halfway.
  6. Bake for 18-20 minutes until a toothpick inserted comes out clean.
  7. Cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Use ripe bananas for the best sweetness and flavor. Do not overmix the batter to keep muffins tender.
