Enchanting cupcakes that add a playful twist to your Halloween celebrations, filled with sweet jam and rich cocoa flavor.

Ingredients

  • 1 cup All-Purpose Flour (sifted to avoid lumps)
  • 1 cup Granulated Sugar (can substitute with a sugar alternative)
  • 3/4 cup Unsweetened Cocoa Powder (Dutch-processed cocoa can enrich the taste)
  • 1 tsp Baking Powder (must be fresh for potency)
  • 1 tsp Baking Soda (must be fresh for potency)
  • 1/2 tsp Salt (sea salt can be used for a gourmet touch)
  • 2 Large Eggs (can substitute with flax eggs for vegan option)
  • 1/2 cup Vegetable Oil (can use melted coconut oil or applesauce)
  • 1/2 cup Buttermilk (can substitute with yogurt or milk mixed with vinegar)
  • 1 tsp Vanilla Extract (almond extract can be used for a twist)
  • 1 cup Raspberry or Strawberry Jam (other fruit jams can be used for different flavors)
  • 1/2 cup Unsalted Butter (can substitute with margarine for dairy-free version)
  • 3 cups Powdered Sugar (add until desired consistency is reached)
  • 1/4 cup Heavy Cream (can replace with coconut cream for dairy-free frosting)
  • 1 tbsp Red Food Coloring (optional for visual appeal)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Combine dry ingredients: In a large bowl, whisk together the sifted flour, sugar, cocoa powder, baking powder, baking soda, and salt until well mixed.
  3. Mix wet ingredients: In another bowl, beat the eggs, then add in the vegetable oil, buttermilk, and vanilla extract. Mix until well combined.
  4. Combine mixtures: Pour the wet ingredients into the dry ingredients, and stir until the batter is smooth. Do not overmix; a few lumps are fine.
  5. Fill the cupcake liners: Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  6. Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Allow them to cool completely in the pan before removing.
  7. Prepare the filling: Once cooled, use a small knife or a cupcake corer to remove a small cone from the top of each cupcake. Fill each hole with raspberry or strawberry jam and replace the top.
  8. Make the frosting: In a mixing bowl, beat the butter until creamy. Gradually add powdered sugar and heavy cream, continuing to mix until fluffy. If desired, add red food coloring for a creepy effect.
  9. Frost the cupcakes: Generously frost each filled cupcake with the buttercream icing, creating a luscious mountain.
  10. Final touches: Optionally, drizzle more jam on top of the frosting for a bleeding effect or decorate with chocolate shavings to resemble dirt.

Notes

Sift your flour to avoid clumps affecting texture. Keep eggs and buttermilk at room temperature for better emulsification.
