Creamy and flavorful roasted garlic mashed potatoes that elevate any meal.

Ingredients

  • 2 pounds russet potatoes
  • 1 whole bulb of garlic
  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the top off the garlic bulb, drizzle with olive oil, and wrap it in aluminum foil. Roast for 30-35 minutes until soft and caramelized.
  2. Peel and cut the russet potatoes into equal-sized chunks. Rinse them in cold water to remove excess starch.
  3. Place the potatoes in a large pot and cover with cold water. Add a generous pinch of salt. Bring to a boil, then reduce to a simmer and cook for about 15-20 minutes until fork-tender.
  4. Drain the potatoes and return them to the pot. Squeeze the roasted garlic into the pot, discarding the skins. Use a potato masher or ricer to mash until smooth.
  5. Slowly mix in the butter and heavy cream, stirring until fully combined. Adjust the cream for your desired consistency.
  6. Taste and season with salt and black pepper as needed. Mix until just combined, and ensure not to overwork the potatoes to keep them fluffy.
