A delightful twist on traditional Korean rice rolls, using tortillas for a quick and approachable meal packed with protein and vegetables.

Ingredients

  • Large flour tortillas
  • Spam or grilled chicken or tofu
  • Canned tuna with mayonnaise
  • 2 scrambled eggs
  • 1 cucumber, sliced
  • 1 carrot, shredded
  • Spinach, fresh
  • 1 cup cooked short grain rice
  • 1 tablespoon sesame oil (or olive oil)
  • Salt and pepper to taste

Instructions

  1. Cook the rice according to package instructions and let it cool slightly.
  2. Prepare the fillings: slice spam into rectangles and pan-fry until golden; mix the tuna with mayonnaise.
  3. Scramble the eggs in a non-stick pan over medium heat until softly scrambled. Set aside.
  4. Spread a thin layer of rice on a tortilla, leaving space at the edges.
  5. Add spam or tuna mixture, scrambled eggs, and vegetables on top of the rice.
  6. Roll the tortilla tightly from one end, securing the fillings inside.
  7. Slice the rolled tortilla into bite-sized pieces and serve with soy sauce or your favorite dipping sauce.

Notes

For optimal texture, ensure rice is sticky and allow it to cool before using. Adjust fillings based on personal preferences or dietary needs.
