A comforting and hearty taco soup loaded with ground beef, beans, and cheese, perfect for cozy dinners and meal prep.

Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 onion, chopped
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 4 cups beef broth
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Brown the beef and onion in a large pot over medium heat until the beef is browned and onion is tender.
  2. Drain any excess fat from the pot.
  3. Add the black beans, kidney beans, corn, diced tomatoes, taco seasoning, and beef broth, and mix well.
  4. Bring to a boil, then reduce the heat and let it simmer for 20-30 minutes.
  5. Melt the shredded cheese into the soup until fully incorporated.
  6. Season to taste with salt and pepper.
  7. Serve the soup hot, garnished with your favorite toppings.

Notes

For a healthier option, substitute ground turkey for beef or use low-sodium broth.
