A quick, delicious one-pan meal showcasing bold Southwestern flavors with sweet potatoes, black beans, and ground beef.

Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 2 medium sweet potatoes, peeled and diced
  • 1 bell pepper, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat the oil: In a large skillet, heat 1 tablespoon of olive oil over medium heat until shimmering.
  2. Sauté the veggies: Add the diced onion and chopped bell pepper to the skillet. Sauté for about 5 minutes until softened.
  3. Add garlic: Stir in the minced garlic and cook for an additional minute, making sure not to burn the garlic.
  4. Brown the beef: Increase the heat to medium-high and add the ground beef. Cook, breaking it apart with a spatula, until browned, approximately 5-7 minutes.
  5. Incorporate other ingredients: Stir in the diced sweet potatoes, drained black beans, canned diced tomatoes, chili powder, cumin, salt, and pepper.
  6. Simmer: Cover the skillet and reduce the heat to medium-low. Cook for 20-25 minutes, stirring occasionally, until the sweet potatoes are tender.
  7. Serve warm: Once everything is cooked and the sweet potatoes are fork-tender, serve the dish warm.
