A quick and satisfying chicken fried rice dish that’s perfect for busy weeknights with versatile ingredients and easy preparation.

Ingredients

  • 4 cups cooked rice, preferably day-old
  • 1 pound chicken breasts, diced
  • 2 tablespoons vegetable oil
  • 2 large eggs, beaten
  • 3 to 4 tablespoons soy sauce
  • 1 cup frozen peas and carrots
  • 3 to 4 green onions, sliced
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients: Gather and chop all ingredients.
  2. Cook chicken: Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add diced chicken and season with salt and pepper. Cook until golden, about 5-7 minutes.
  3. Scramble eggs: Push chicken to one side, add another tablespoon of oil, and pour in beaten eggs. Scramble until fully cooked, about 2 minutes.
  4. Add vegetables: Stir in minced garlic and frozen peas and carrots. Cook for an additional 2-3 minutes.
  5. Combine rice: Add cooked rice, breaking up clumps. Pour in soy sauce and mix well. Cook for another 3-4 minutes.
  6. Finish with green onions: Stir in sliced green onions, saving some for garnish. Adjust seasoning if needed.

Notes

For best results, use day-old rice and ensure the skillet is hot before cooking.
