Roasted Beet and Goat Cheese Salad

A vibrant salad combining sweet roasted beets, creamy goat cheese, and crunchy walnuts, perfect as a side dish or light lunch.

Ingredients

  • 6 medium-large beets (about 2 bunches)
  • 1 tablespoon olive oil
  • Salt, to taste
  • 1/3 cup goat cheese, crumbled
  • 1/2 cup raw walnut halves
  • 1/4 cup chopped fresh herbs (parsley, dill, or chives)
  • 2 tablespoons olive oil for dressing
  • 1 tablespoon balsamic vinegar
  • 1.5 teaspoons lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon honey
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Remove the greens and peel the skins off the beets, then cut them into 1-inch chunks.
  3. Toss beet chunks with olive oil and salt, then spread them on the baking sheet.
  4. Roast the beets for 30-35 minutes until fork-tender, tossing halfway through.
  5. While roasting, prepare the balsamic dressing by shaking olive oil, balsamic vinegar, lemon juice, garlic powder, and honey in a jar.
  6. Once roasted, toss the beets with the balsamic dressing and top with goat cheese, walnuts, and herbs.
  7. Serve immediately and enjoy!

Notes

For added protein, consider adding grilled chicken or chickpeas to the salad. Adjust the seasoning in the dressing to your taste.
