Adorable and simple ghost cupcakes that are perfect for Halloween gatherings, combining fluffy vanilla frosting with playful designs.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup milk (or a dairy-free alternative)
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup boiling water
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup heavy cream (or milk)
  • 1 teaspoon vanilla extract
  • White candy melts (for ghost decorations)
  • Mini chocolate chips or black icing for eyes

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. In another bowl, combine the egg, milk, vegetable oil, and vanilla extract. Mix the wet ingredients into the dry ingredients until well blended. Carefully stir in the boiling water until just combined.
  2. Pour the batter evenly into cupcake liners in a muffin tin, filling each about two-thirds full. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Once done, allow the cupcakes to cool completely.
  3. In a large bowl, beat softened butter until creamy. Gradually add powdered sugar and mix until smooth. Slowly add heavy cream and vanilla extract, beating until you reach your desired consistency.
  4. Using a spatula or piping bag fitted with a large round tip, frost each cooled cupcake generously with the buttercream frosting.
  5. Melt the white candy melts according to package instructions and let cool slightly. Drizzle the melted candy over each frosted cupcake to create the ghost’s body. Press two mini chocolate chips or dots of black icing onto each cupcake to form eyes.

Notes

Ensure all ingredients are at room temperature for best results. Chill the frosting if too soft.
