A delightful dish combining roasted spaghetti squash with creamy feta cheese and burst of flavor from cherry tomatoes.

Ingredients

  • 1 spaghetti squash
  • 200g feta cheese
  • 2 cups cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Brush the insides with olive oil, then sprinkle with salt and pepper.
  4. Place the halved squash cut-side down on a baking sheet. Roast for about 30-40 minutes until tender.
  5. Combine the cherry tomatoes and feta cheese in a baking dish, drizzle with olive oil, and season with salt and pepper. Bake for 20-25 minutes.
  6. Use a fork to scrape the squash flesh into spaghetti-like strands.
  7. Mix the spaghetti squash strands with the roasted feta and tomatoes until well combined.
  8. Serve warm, garnished with fresh basil if desired.
