8 oz chow mein noodles
2 tablespoons vegetable oil
2 cups mixed vegetables (such as bell peppers, carrots, and snow peas)
2 cloves garlic, minced
1 teaspoon ginger, minced
3 tablespoons soy sauce
Salt and pepper, to taste

Instructions
Cook the noodles: Bring a pot of water to a boil. Cook the chow mein noodles according to package instructions, usually around 3-4 minutes. Drain and set aside.
Prepare the pan: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.
Aromatics first: Add the minced garlic and ginger to the hot oil. Stir-fry for about 30 seconds, or until fragrant, ensuring not to burn them.
Add the veggies: Toss in the mixed vegetables. Stir-fry for 2-3 minutes, or until they are crisp-tender.
Combine noodles and sauce: Add the cooked noodles to the vegetable mixture along with 3 tablespoons of soy sauce. Toss everything together until well combined and heated through.
Season it right: Taste and season with salt and pepper as needed.
Serve: Serve the chow mein hot, garnished with sliced green onions for a fresh crunch.
