Easy 30-Minute Lasagna Soup

A quick and comforting lasagna soup that combines the rich flavors of traditional lasagna in just 30 minutes, perfect for busy weeknights.

Ingredients

  • 1 pound Italian sausage
  • 8 ounces lasagna noodles, broken into pieces
  • 4 cups tomato-cream broth
  • 15 ounces ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 2 tablespoons olive oil
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese (for serving)

Instructions

  1. Sauté the olive oil over medium heat in a large pot. Add the diced onion and minced garlic. Cook until soft and fragrant, about 3-4 minutes.
  2. Add the Italian sausage to the pot. Break it apart and cook until it’s browned, approximately 5-7 minutes.
  3. Stir in the Italian seasoning, salt, and pepper. Then, pour in the tomato-cream broth, stirring to combine.
  4. Bring the mixture to a boil. Add the broken lasagna noodles, and reduce the heat to a simmer. Cook until the noodles are tender, about 10 minutes.
  5. Ladle the hot soup into bowls and top each serving with dollops of ricotta and generous amounts of mozzarella cheese. If desired, sprinkle with grated Parmesan cheese.

Notes

For a thicker soup, allow it to simmer longer or add a little extra cheese. Customize with additional veggies or spice.
