Deviled Egg Eyeballs

A fun and spooky twist on classic deviled eggs, perfect for Halloween gatherings.

Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Green olives (for irises)
  • Black olives (for pupils)
  • Red food coloring (optional)

Instructions

  1. Hard boil the eggs: Place the eggs in a pot of cold water, bring to a boil, then cover and remove from heat. Let sit for about 12 minutes.
  2. Cool the eggs: Drain hot water and transfer eggs to a bowl of cold water.
  3. Prepare the egg whites: Peel the eggs, cut them in half lengthwise, and remove yolks into a separate bowl.
  4. Make the filling: Mash yolks with a fork, mix in mayonnaise, mustard, salt, and pepper until smooth.
  5. Fill the egg whites: Spoon or pipe yolk mixture into egg white halves.
  6. Add the olives: Slice green olives in half and place one half on each filled egg.
  7. Create the pupils: Use black olives for pupils by placing small pieces in the center of green olive halves.
  8. Optional creepy touch: Use red food coloring to dye the edges of the egg whites.
  9. Serve and enjoy: Arrange deviled egg eyeballs on a platter.

Notes

Substitute Greek yogurt for mayonnaise for a lighter version. Fresh eggs are easier to peel.
