Dakbokkeumtang is a comforting Korean chicken stew packed with flavorful spices and tender chicken, perfect for chilly nights.

Ingredients

  • 1.5 lbs chicken (cut into pieces)
  • 4 cups chicken broth
  • 1 onion (sliced)
  • 2 carrots (sliced)
  • 2 potatoes (cubed)
  • 2 tablespoons soy sauce
  • 1 tablespoon gochugaru (Korean chili flakes)
  • 2 tablespoons sesame oil
  • 3 cloves garlic (minced)
  • Salt and pepper to taste
  • 2 green onions (chopped) for garnish

Instructions

  1. Heat the sesame oil in a large pot over medium heat.
  2. Add the chicken pieces and cook until browned on all sides, about 5 to 7 minutes.
  3. Stir in the sliced onion and minced garlic, cooking until the onion is translucent, about 2 to 3 minutes.
  4. Add the soy sauce, gochugaru, sliced carrots, and cubed potatoes, stirring well to coat.
  5. Pour in the chicken broth and bring to a boil.
  6. Reduce the heat and let the stew simmer for about 30 to 40 minutes until the chicken is cooked and vegetables are tender.
  7. Season with salt and pepper to taste, then garnish with chopped green onions before serving.

Notes

Consider using bone-in chicken for added flavor. Adjust gochugaru for desired spice level.
