Ingredients
2 medium zucchinis (about 400 g)
150 g feta cheese (crumbled)
1 egg
50 g breadcrumbs
2 tbsp oats (optional for added texture)
2 tbsp freshly chopped parsley
1 clove garlic (finely chopped)
1 tsp dried oregano
1 tsp salt
½ tsp pepper
2 tbsp olive oil
Instructions
Prepare the Zucchini: Wash the zucchinis and trim off the ends. Grate them and squeeze out excess moisture with a kitchen towel.
Mix the Filling: In a bowl, combine the drained zucchini, crumbled feta, egg, breadcrumbs, oats, garlic, oregano, parsley, salt, and pepper. Stir until well combined.
Shape the Balls: Shape the mixture into small balls about the size of a golf ball and place them on a lined baking sheet.
Bake to Crispy Perfection: Drizzle with olive oil and bake in a preheated oven at 180°C (350°F) for about 20 minutes, turning halfway through.
Cool and Serve: Allow to cool slightly before serving. Best enjoyed warm.
Notes
For a gluten-free option, substitute breadcrumbs with ground almonds or gluten-free breadcrumbs. Taste before baking to adjust seasoning if necessary.
