A delightful fusion of flavors featuring tender steak, vibrant salsa, and creamy sauces over jasmine rice, perfect for quick weeknight dinners.

Ingredients

  • 1.5 pounds of top sirloin steak (or preferred cut)
  • 2 to 3 tablespoons of neutral oil (canola or vegetable)
  • Southwest-style seasoning (to taste)
  • 1 cup of canned yellow corn (strained and rinsed)
  • 1 cup of black beans (strained and rinsed)
  • 1/2 of a large red onion (finely diced)
  • 1 jalapeño (finely diced, with or without seeds)
  • 1/2 cup of finely diced tomatoes
  • 1/2 cup of chopped cilantro
  • 2 tablespoons of minced garlic
  • Juice of 1 lime (freshly squeezed)
  • Salt (to taste)
  • 1/3 cup of light sour cream
  • 2/3 cup of Greek yogurt
  • 3 tablespoons of Tabasco Chipotle pepper sauce
  • 1.5 tablespoons of Chamoy sauce
  • 1.5 tablespoons of honey
  • 1 teaspoon of garlic powder
  • Cooked jasmine rice (for serving)
  • Avocado slices (for garnish)
  • Chopped cilantro (for garnish)

Instructions

  1. Prepare the salsa: In a medium bowl, combine the corn, black beans, red onion, jalapeño, diced tomatoes, chopped cilantro, minced garlic, lime juice, and salt. Mix well and refrigerate until ready to use.
  2. Make the chipotle sauce: In a separate small bowl, blend together the sour cream, Greek yogurt, Tabasco sauce, Chamoy sauce, honey, and garlic powder. Taste and adjust seasoning if necessary. Refrigerate until serving.
  3. Cut the steak into bite-sized cubes. In a bowl, toss the steak cubes with neutral oil and Southwest seasoning until evenly coated.
  4. Heat a greased skillet over medium-high heat. Add the seasoned steak and cook for 6 to 8 minutes, stirring occasionally, until the steak reaches your desired doneness.
  5. Start with a generous bed of cooked jasmine rice in each bowl. Top with salsa, then add the cooked steak. Drizzle with the creamy chipotle sauce, and finish with avocado slices and extra chopped cilantro.
