Creamy White Lasagna Soup

A comforting and delicious soup that combines the flavors of traditional lasagna with a creamy broth, making it perfect for busy weeknights.

Ingredients

  • 1 lb Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 9 oz lasagna noodles
  • 1 cup heavy cream
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Brown the sausage in a large pot over medium heat, about 5-7 minutes.
  2. Add the diced onion and minced garlic. Sauté until the onion is soft and translucent, about 3-4 minutes.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the lasagna noodles and cook according to package instructions, about 8-10 minutes.
  5. Lower the heat and stir in the heavy cream, mozzarella, and spinach. Cook for an additional 2-3 minutes until spinach wilts and cheese melts.
  6. Season with Italian seasoning, salt, and pepper to taste.
  7. Ladle the soup into bowls and serve hot, garnishing with extra Parmesan cheese if desired.

Notes

Don’t overcook the noodles as they will soften further in the soup. Fresh spinach works best; if using frozen, drain excess moisture.
