Creamy Herb Chicken with Mashed Potatoes and Glazed Carrots

A comforting and easy-to-prepare meal featuring savory chicken in a creamy herb sauce, served with buttery mashed potatoes and sweet glazed carrots.

Ingredients

  • 2–3 boneless, skinless chicken breasts
  • Salt & pepper, to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream (or half-and-half)
  • 1/3 cup grated Parmesan cheese
  • 1/2 tsp Dijon mustard (optional)
  • 1 tbsp chopped parsley or chives (for garnish)
  • 1.5 lbs Yukon gold or russet potatoes, peeled and cubed
  • 1/2 cup milk or cream
  • 2–3 tbsp butter for mashed potatoes
  • 3 cups baby carrots or sliced carrots
  • 2 tbsp butter for glazed carrots
  • 1 tbsp brown sugar or honey
  • 1/4 tsp salt
  • Optional: pinch of cinnamon or thyme

Instructions

  1. Boil the potatoes in salted water until fork-tender, about 15–20 minutes. Drain and return to pot.
  2. Mash the potatoes with butter, milk (or cream), and salt until smooth and creamy. Keep warm.
  3. Prepare the carrots in a saucepan with butter, brown sugar (or honey), salt, and a splash of water; cover and simmer for 10–12 minutes until tender, removing the lid for the last few minutes.
  4. Season the chicken with salt, pepper, garlic powder, thyme, and rosemary.
  5. Cook the chicken in a skillet with olive oil and butter, searing for 4–5 minutes on each side until golden brown and cooked through.
  6. Make the herb cream sauce by sautéing garlic, adding chicken broth, heavy cream, Parmesan, and Dijon mustard; simmer until thickened.
  7. Return the chicken to the skillet, spooning the cream sauce over it and simmer for an additional 2 minutes.
  8. Serve the chicken with mashed potatoes and glazed carrots, drizzling extra sauce over the top and garnishing with parsley or chives.

Notes

Use fresh herbs for enhanced flavor and ensure the chicken is cooked just right for juiciness. Adjust creaminess to your preference.
