Ingredients

  • 2 cups cooked chicken, shredded
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 teaspoon taco seasoning
  • 4 large flour tortillas
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Mix Ingredients: In a mixing bowl, combine the shredded chicken, cream cheese, salsa, cheddar cheese, and taco seasoning until everything is well blended.
  2. Prepare Tortillas: Lay out a tortilla on a flat surface. Spread a layer of the chicken mixture evenly over the tortilla, leaving a small border around the edges.
  3. Roll It Up: Starting from one end, carefully roll the tortilla tightly until fully wrapped. Repeat this with the remaining tortillas and filling.
  4. Slice into Pinwheels: Once all tortillas are rolled, slice each roll into bite-sized pinwheels, about 1-inch thick.
  5. Garnish and Serve: Arrange the pinwheels on a platter and sprinkle with freshly chopped cilantro. Serve immediately, or refrigerate until ready to serve.

Notes

For convenience, use rotisserie chicken or poach chicken breasts for a healthier option. Make sure the cream cheese is at room temperature for easy mixing.
