Chicken Skewers with Korean BBQ Sauce

Delightful chicken skewers marinated in a rich Korean BBQ sauce, perfect for grilling or broiling.

Ingredients

  • 1 1/2 lbs. chicken thighs (boneless, skinless)
  • 2 tsp fresh ginger (finely grated)
  • 2 tsp minced garlic
  • 3 tbsp low sodium soy sauce
  • 3 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 2 tbsp gochujang (Korean chili paste)
  • Chopped green onions (optional, for garnish)

Instructions

  1. Prepare the chicken: Cut the chicken thighs into 1 1/2-inch cubes and place them in a bowl.
  2. Make the marinade: In a separate small bowl, whisk together ginger, garlic, soy sauce, brown sugar, sesame oil, rice vinegar, and gochujang until well combined.
  3. Marinate the chicken: Pour half of the marinade over the chicken cubes and mix well to ensure each piece is fully coated. Cover and refrigerate for at least 4 hours or overnight for optimal flavor. Keep the remaining marinade in the fridge for basting later.
  4. Preheat the grill: When you’re ready to cook, preheat your grill to medium heat.
  5. Skewer the chicken: Thread the marinated chicken onto skewers, leaving a little space between pieces for even cooking.
  6. Grill the skewers: Lightly oil the grill grates, then place the skewers on the grill. Cook them for 20-30 minutes, turning every 3-4 minutes until the chicken is cooked through and has an internal temperature of 165°F. Baste with the remaining marinade during the last few turns.
  7. Serve: Remove the skewers from the grill, garnish with chopped green onions if desired, and serve with your favorite side dishes.

Notes

For best results, cut the chicken into uniform pieces and marinate for as long as possible to absorb flavor.
