A comforting and hearty meal prepared in one pot, featuring ground beef, zesty Cajun seasoning, and creamy cheese.

Ingredients

  • 1 lb ground beef
  • 1 cup rice (preferably long-grain)
  • 2 cups beef broth
  • 1 tablespoon Cajun seasoning
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1 cup shredded cheese (cheddar works well)
  • 1/2 cup mayonnaise
  • 1 teaspoon hot sauce (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. Brown the beef in a large pot over medium heat, breaking it apart until fully cooked (about 5-7 minutes). Drain any excess fat.
  2. Sauté the chopped onion and bell pepper until softened (about 4-5 minutes).
  3. Add the Cajun seasoning and cook for another minute to release the flavors.
  4. Combine the rice and beef broth, bringing the mixture to a boil.
  5. Simmer on low heat, covered, for 20 minutes or until the rice is tender.
  6. Melt in the shredded cheese until fully combined.
  7. Prepare a drizzle by mixing mayonnaise and hot sauce, and add on top just before serving.

Notes

For added texture, consider incorporating frozen corn or diced zucchini. Adjust the spice level with more or less Cajun seasoning.
