Delightful and healthy broccoli fritters that are crispy on the outside and tender on the inside, perfect as a snack or side dish.

Ingredients

  • 2 cups broccoli florets, chopped
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Mix the batter: In a large bowl, combine the chopped broccoli, flour, eggs, Parmesan cheese, minced garlic, parsley, salt, and pepper. Mix until all ingredients are well incorporated.
  2. Heat the oil: In a pan, heat oil over medium heat until shimmering. You can test if it’s ready by dropping a small amount of the batter into the oil; it should sizzle.
  3. Scoop and shape: Using a spoon, scoop spoonfuls of the mixture into the hot oil. Flatten each scoop slightly with the back of the spoon for even cooking.
  4. Cook to perfection: Fry the fritters for about 3-4 minutes on each side until they are golden brown. You may need to adjust the heat to prevent burning.
  5. Drain and serve: Once cooked, place the fritters on paper towels to absorb excess oil. Serve while warm for the best flavor and texture.

Notes

Fresh broccoli is best for flavor, but you can use frozen if pressed for time. Consider substituting gluten-free flour if necessary. You can also use a different cheese like cheddar for a change in flavor.
