Homemade Creamy Tomato Basil Soup

A comforting soup that warms your heart with rich flavors and creamy texture, perfect for chilly days.

Ingredients

  • 2 tablespoons Olive Oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 2 cans (14.5 oz each) Canned Whole Tomatoes
  • 2 cups Vegetable Broth
  • 1 cup Fresh Basil, loosely packed
  • 1/2 cup Heavy Cream
  • Salt and Pepper, to taste

Instructions

  1. Sauté the diced onion in olive oil over medium heat for about 5 minutes until softened. Stir in the minced garlic and cook for an additional minute.
  2. Pour in the canned tomatoes (with their juices) and the vegetable broth. Stir to combine, then bring to a boil. Reduce to a simmer and let cook for 10 minutes.
  3. Remove the pot from heat. Puree the soup until smooth using an immersion blender or by transferring to a blender in batches.
  4. Stir in the fresh basil and heavy cream. Cook over low heat for 5 minutes, then season with salt and pepper to taste.
  5. Ladle into bowls and garnish with fresh basil leaves or a swirl of cream if desired. Enjoy!
