Korean Spicy Cold Noodles, a refreshing summer dish with fresh flavors and a kick of spice, perfect for hot days.

Ingredients

  • 8 oz cold noodles (like soba or somen)
  • 1-2 tablespoons gochujang (Korean red chili paste)
  • 1 tablespoon sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 sliced cucumber
  • 1 soft-boiled egg
  • Optional: sesame seeds
  • Optional: chopped green onions

Instructions

  1. Cook the cold noodles according to the package instructions, usually around 3-5 minutes. Drain and rinse under cold water. Set aside to cool completely.
  2. Prepare the sauce by whisking together gochujang, sugar, soy sauce, and sesame oil in a separate bowl.
  3. Combine the cooled noodles with the sauce, tossing until evenly coated.
  4. Plate the noodles in bowls and top with sliced cucumber and a soft-boiled egg cut in half.
  5. Garnish with sesame seeds and chopped green onions if desired, then enjoy!

Notes

Customize the spice level and toppings to suit your preference. For an even cooler experience, chill your toppings and sauce before serving.
