Lasagna Soup combines the rich, comforting flavors of traditional lasagna into a quick and easy soup format, perfect for busy weeknights.

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 1 tablespoon Italian seasoning
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • Parmesan cheese, for serving
  • Fresh basil, for garnish

Instructions

  1. Brown the beef: In a large pot over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  2. Sauté the vegetables: Add the chopped onion and minced garlic to the pot. Cook until the onion is softened and fragrant, about 3-4 minutes.
  3. Add base ingredients: Stir in the crushed tomatoes, chicken or vegetable broth, and Italian seasoning. Bring the mixture to a boil.
  4. Cook the noodles: Add the broken lasagna noodles to the pot. Reduce the heat and simmer until the noodles are tender, about 10 minutes.
  5. Layer in the cheese: In serving bowls, layer some ricotta and mozzarella, then ladle the hot soup over the top.
  6. Finish and serve: Top each bowl with freshly grated Parmesan cheese and garnish with basil before serving.

Notes

For customization, you can add vegetables like spinach or use ground turkey instead of beef.
