Delight in the flavors of Italy with this easy and quick Chicken Piccata, featuring tender chicken in a zesty lemon and caper sauce.

Ingredients

  • 4 boneless, skinless chicken breasts
  • ½ cup flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • ¼ cup lemon juice
  • 2 tablespoons capers
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare the chicken: Season the chicken breasts with salt and black pepper. Dredge each piece in flour, shaking off the excess.
  2. Heat the oil: In a large skillet, heat the olive oil over medium-high heat until hot but not smoking.
  3. Cook the chicken: Add the chicken to the skillet in a single layer. Cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
  4. Sauté the garlic: In the same skillet, add the butter and minced garlic. Sauté for about 30 seconds until fragrant, being careful not to brown the garlic.
  5. Make the sauce: Pour in the chicken broth and lemon juice. Bring to a gentle simmer and scrape up any browned bits from the bottom of the skillet.
  6. Add capers: Stir in the capers, and return the chicken to the skillet. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.
  7. Finish with parsley: Remove from heat and sprinkle with chopped parsley before serving.

Notes

Pound the chicken to an even thickness for uniform cooking. Adjust seasoning to taste before serving.
