Ingredients
1 lb beef sirloin (cut into thin strips; can substitute with flank steak)
1 medium onion (sliced thinly)
8 oz mushrooms (sliced; button or cremini work well)
2 cloves garlic (minced)
2 tbsp all-purpose flour (for thickening)
1 cup beef broth (use low-sodium broth for milder flavor)
1 cup sour cream (provides creaminess; plain Greek yogurt can be a substitute)
2 tbsp Worcestershire sauce (adds depth of flavor)
Salt and pepper (to taste)
1 tbsp olive oil (for sautéing)
8 oz egg noodles (or pasta of your choice)
Instructions
Cook the noodles: In a large pot of boiling salted water, cook the egg noodles according to package instructions. Drain and set aside.
Sauté the beef: In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the beef strips in batches, cooking for about 2-3 minutes until browned. Remove from skillet and set aside.
Cook the veggies: In the same skillet, add the sliced onions and mushrooms. Sauté for about 5 minutes, until the mushrooms have released their moisture and browned slightly.
Add garlic and flour: Stir in the minced garlic and cook for 1 minute until fragrant. Sprinkle the flour over the veggies, stirring constantly for about 1 minute to cook the flour slightly.
Add beef broth: Gradually add the beef broth to the skillet, stirring until the mixture is smooth and slightly thickened.
Finish the sauce: Lower the heat and stir in the sour cream and Worcestershire sauce. Allow the sauce to simmer gently for a couple of minutes; do not boil.
Combine: Return the beef to the skillet, tossing to coat in the sauce. Season with salt and pepper to taste.
Serve: Serve the beef stroganoff over the cooked egg noodles, and enjoy!
